So I'm currently building a custom bobber using a Suzuki vl 125 intruder. I've taken the air-box off and I'm thinking about using shotgun exhausts. I'm aware that this may mean that the carburetors will need to be re-jetted however this is my first build and I have limited knowledge on this topic. Has anyone tried this before that could point me in the direction of what size jets to use?

I suspect that you are on your own with this one. I have never seen one or heard of one in the US. It looks like it has BSD 26mm mikunis on it. I assume those are some tiny CV carbs that will use standard Mikuni jets that should be relatively available. There is no way of knowing what jetting it will need after you change the intake an exhaust. It might need richer or leaner at various places. You will need to read up on jetting and go from there If you are very precise and specific when posting on here there may be some very experienced carb tuners that can give some advice, once they have symptoms.
It may be better to look at a pair of small Mikuni VM slide needle carbs.
