Seat options

I am exploring options for seats and am leaning toward tuffside seats. I purchased a cafe seat from Amazon, but it was just a cheaper option. I realized after some more research my cheaper option is roughly 4 inches shorter than the tuffside seats, which kind of sucks being that it wouldn't be a simple swap out down the road.

The other option I was considering was to make my own seat. Does anyone have any good tutorials on this or opinions on it? It seems like I could potentially tear the original seat down and give it a cafe look, has anyone attempted that?
 
I built a cafe-style on a GL1000 pan. Just use multiple layers of carpet padding (the high-density bonded foam type) bonded with 3M 80 spray cement. Shape as you go with an electric carving knife. I had an upholsterer cover mine but there are examples here on DTT of amazing seats stitched by members. Also many examples of making their own custom seat pans.
