Well...went the typical route of try it myself til I F'it up. Was successfully getting through a broken off exhaust stud when I hit oil. Second bit in my progression went too far in. Am I screwed or can this be fixed without removing the head ?

id say you were screwed and need a new head but might be able to threadlock the new bolt and it might seal. i'd just buy a new head though. i snapped a cam cap bolt and tried to drill it out myself but went a little crooked but it can be salvaged i just have to use a larger bolt
go to ebay and get a new one ! the head on my cb650 was shot so i picked one up there for 35.00 shipped. and it turned out to be nicer then the one i had ! good luck
