Just heard someone mention they got a "turbo" for their sub 1000cc motorcycle. How do these work on bikes? And would it be WAY too much for my lil' SR250?

If you're looking to turbo your bike, I suggest getting a good book and reading through it to help you get a good understanding of the complete system. Physically hooking up a turbo and piping is not that hard, fuel and tuning is the key bit, really need to have a good understanding of this or it will quickly go kaboom. You'll need to figure out if the SR bottom end can handle an increase in power as well. Some cranks and rods just can't take the increase.
