So I want to go back to my upholsterer and get the same material my seat is wrapped in to make my own grips. One question, where do I go about getting an unpadded 7/8" grips to go over my bars?

Why do you need 'unpadded' grips?
People who use leather strips to make grips wrap the left side bar directly, and the throttle sleeve. Exactly how slide-on rubber grips get mounted.
Like most grips once they're on if you've put them on well you'll have to cut them off if you need to remove the material for some reason.
