I do have a couple of extra inches on the ends. Could I just shorten them that way so that I won't have to weld?

I don't think that will work out well, you need the space for your controlls...

ride it for now and just keep an eye out for some smaller bars in the near future or something
or take 1 mirror off, you only really need 1...

How did you cut the front fender down, do you have close up pics of it?

Mine looks crappy. I think it can be saved though. Just gonna be a little shorter than first anticipated
