This has been so true for me it's ridiculous. I'll buy something that I see for $10 I have no use for at the moment, but 6 months later it is just what I need. :D
Here is a quick way to do a clean brushed look on aluminum you don't want to polish.
Give it a light sandblasting.
Use wax and a scotchbrite pad to rub it out.
The lighter one isn't rubbed out with wax yet.
Done.
I like Noxon 7 metal polish for making old chrome look decent. Waxing it afterward will slow the rust from returning.
For very rusty or peeling chrome I'll sandblast and paint. The chrome doesn't need to be completely removed if it isn't peeling or flaking, but just roughed up for paint...

The hub is the same. The difference is the rotor offset from between '76 and older 34mm forks with two piston calipers, and '77 and up with 35mm forks with single piston calipers.
One way I've seen to fix exhaust dents is to drill a small hole on the other side, and then tap/push the dent out from the inside using some steel rod, then weld up the hole.
'80 and up are kinda weird in the rear frame area, so you might have more trimming to do there. That seat on my '75 is a Suzuki T250 pan with part of a CB350 gas tank used for the bum stop. The tail light is a basic Lucas style light.
I'm a bit east of Lafayette, so both Bunker Hill and IRP(or whatever they call it these days) are about an hour away. Bunker Hill is a great place to watch racing, since it is an older, smaller type track. I've been down it in a car, but not a bike. Might have to try it sometime.
