I'm not really criticising your tyre choice, just the size and the way your using them
The correct size will last longer than oversize but will never get great mileage (I consider 1~2,000miles OK on cheap soft tyres)
Higher bars work for trail riding plus, you don't need re-sets (rear-set's won't be too far back if your over 5' 8" but will cost a bit)
Forks need a brace, I was speaking to friend today who recently fitted stock front fender to his 360 (bought it without fender)
He said it was noticeable how much better bike felt just pulling out of driveway, if the difference is noticeable in about 30~40 ft it's significant
Shocks are up to you, decent shocks are expensive, no getting around it
I use cheap shocks, but, I re-build them to work.
If you don't have the tools and skills to re-build shocks, you can use stock as long as they don't leak and still damp out spring rebound Paying someone to rebuild cheap Chinese shocks would put cost in the high-medium price range (around $350 - ish)
As for the video's of Ducati's going off road, if you've ridden one you know just how well they handle and how 'front heavy' they are off road. On the street the front end feels real light, it's difficult not to wheelie away from every red light and stop sign (even when turning ;D )

Oh, btw. I've made a couple of Go-Pro vids, it looks like they were doing 40, maybe 50mph on the gravel track, you don't even need to change the tyres for that
